Heritage Day Leah's Summer Salad

Happy Heritage Day, PNA stationeers, creators and innovators! You’re probably planning on having a braai, just like all our other South African citizens, because today is also known as Braai Day. We’ve thought it best to ask Leah to share a quick and easy, yet mouth-watering salad with you to enjoy as a side dish to whatever you’re planning to have on the coals.

Ingredients:

  • 1 pack baby spinach
  • 250g Italian tomatoes
  • 1 Small pack of long-stemmed broccoli
  • 100g Chevins goat cheese
  • 2 avocados
  • crushed nuts of your choice

Dressing:

  • 4 tablespoons olive oil
  • 2 tablespoons mustard
  • 3 tablespoons lemon juice
  • 1 tablespoon honey
  • Salt and pepper

Method:

  1. Brown the tomatoes and broccoli in a bit of oil with salt, pepper, and mixed herbs. Let it cool.
  2. On a flat salad tray, first, pack the baby spinach leaves, then arrange sliced avocados, goat cheese and eventually the cooled tomatoes and broccoli mix.
  3. Sprinkle crushed nuts over and serve with the prepared dressing.
